Apricot Chicken Saute

Do you really think that chicken is boring? Think again. This  apricot chicken saute will definitely change your mind! It’s an easy and fast dish with very minimal prep time and the outcome I promise will be amazing! All the flavors mixed together will not disappoint.

The skillet sweet potatoes will enhance the flavours even more. You must try this and be your own judge. Yummy :)

Ingredients:

  • 2 Chicken breasts - organic if possible

  • Apricot preserve

  • Garlic chili sauce

  • Oil 

  • Garlic

  • Red pepper

  • Mustard

  • Green beans

  • Shallots 1-2

  • carrots

  • Balsamic vinegar

  • Beef bouillon

  • Broccoli

  • Sweet potato x 3 

  • broccoli

Instructions:

  • Cut up all your veggies and keep it in the bowl

  • Cut up the sweet potatoes in circles

  • Cut up the chicken and tenderize it

  • Prepare your marinade - mix 3 tablespoons of apricot preserve, 1 tablespoon of chili sauce, 1 tablespoon of balsamic vinegar, 2 garlic cloves, 1 teaspoon of beef bouillon  and black ground pepper- add the chicken and mix it up

Chicken:

  • Warm up a large frying pan on the top of the stove

  • Once it’s hot add your chicken with all the marinade and cook chicken in there for about 10 minutes

  • Add in your veggies, green beans, carrots, red pepper, shallots

  • Cook this all together for another 15 minutes

Sweet potatoes:

  • Warm up skillet in the oven at 350

  • When the oven reaches temperature add the sweet potatoes to the skillet with a little oil and spread it out

  • Cook this for about 15 minutes then turn the potatoes around and cook them for an other 15 minutes

Broccoli

  • In a steamer add in 2 cups of broccoli

  • Steam until it’s half soft or prefer soft then steam it longer. Should be done in about 10 minutes
