Basil Chicken with Pasta

If you love the taste of basil this dish will be perfect for you! Don’t you think sometimes we need new ideas and gear away from the old way of making pasta dishes? They are all wonderful but don’t you crave something new, mouth watering? This new creation might give you just exactly that. Please try and I would love to hear your input!

Ingredients:

  • 2 shallots

  • 2 nice pieces of organic chicken breasts

  • Garlic (I used here the frozen garlic cubes from Trader Joe’s)

  • 1 package of fresh basil

  • 1 pack of broccolini

  • 1 pack of baby portobello mushrooms

  • 1 bag of rice spaghetti

  • olive oil

  • balsamic vinegar

  • half & half cream

  • marsala cooking wine

  • sun dried tomatoes

  • crushed red pepper

  • bouillon ( I use better than bouillon)

  • black crushed pepper

  • 2 lemons

Instructions:

Spicy Basil Chicken

  • cut up the 2 chicken breasts into thin pieces

  • put about 2 tablespoon of olive oil in a frying pan and after you cut up your shallots add them to the pan. Sautee this for few minutes (I used my skillet, it makes everything so delicious.)

  • add the chicken pieces to the skillet, add some salt and black pepper and sautee them until each piece is slightly brownish on each side

  • In a bowl mix at least 15 leaves of basil, with 2 garlic cubes, 1 teaspoon of bouillon, 1 teaspoon of black pepper, 1/2 of teaspoon crushed red pepper, 1/2 squeezed lemon, 1/2 of a cup of half and half creamer and if you need to you can add a little water

  • Add this mix in the blander and bland it until smooth and pour it over the chicken

  • Cook it for a few more minutes and cover it up with a lid and let it sit

The mushroom with sun dried tomatoes

  • add 2-3 tablespoon of olive oil to a frying pan

  • cut up your mushrooms into small pieces and add it to the oil and sautee this for a few minutes

  • add in 2 cubes of garlic

  • add in 1 teaspoon of bouillon

  • add 1/2 of a cup marsala wine

  • add 1/2 of teaspoon of crushed red pepper

  • add 2 teaspoon of sun dried tomatoes cut up into small pieces

  • Cook this mix for about 5 minute, then add in some cut up basil, stir it and then put a lid on and let it sit

Broccolini

  • Cut up your broccolini into smaller pieces

  • add 2 tablespoon of olive oil to a frying pan and warm it up, then add in your broccolini

  • add in 1 teaspoon of bouillon

  • Add 2 cubes of garlic

  • add 1 squeezed lemon juice

  • add 2 tablespoon of balsamic vinegar

  • add 1/2 teaspoon of hot crushed red pepper and sautee this until broccolini is soft half a way. (don’t overcook it)

Rice Spaghetti

  • boil water in a pot and add 1 teaspoon salt and 1 tablespoon of olive oil

  • when the water is boiling add in your rice spaghetti and boil it until pasta is soft

  • remove it, drain the water and rinse it with cold water

  • add it back in the pot and add olive oil and mix it in - this will assure that your pasta will not become sticky

Serve the chicken next to the pasta. Add the mushroom mix over your pasta along with your broccolini. This is a healthy and very delicious mix. You can serve it with extra lemon and basil on the side. And for the cheese lovers you can offer parmesan cheese.
