Beef Stroganoff Served Over Polenta

 

Beef Stroganoff is one of my favorite dishes. The great thing is that if you don’t like beef you can make it with chicken, or just with the mushrooms and it will be just as delicious. I served it here instead of egg noodles over Polenta which was really yummy. The Polenta soaked up all the flavors in the sauce. You can serve this over noodles, mashed potatoes, rice or polenta. Absolutely a must try!

Ingredients:

  • Rib Eye Steak 1 1/2 to 2 lbs (make sure you purchase good quality steak, beaf for this dish)

  • 2 boxes of baby portobello mushrooms

  • 1 medium size onion

  • 2 garlic cloves

  • 1 cube of butter

  • worcestershire sauce

  • dijon mustard

  • black crushed pepper

  • salt

  • paprika

  • cornstarch

  • red wine

  • half and half

  • sour cream

  • parsley

Instructions:

  • cut up the steak into 1/2 inch thick pieces

  • dice the onion

  • cut up the mushrooms into thin slices

  • on top of the stove heat up a skillet

  • in the meantime put 1 teaspoon of salt, pepper & paprika and 1 tablespoon of oil all over the beef and stir it

  • put the beef in the skillet but make sure you don’t put the pieces on top of each other, brown each piece on each side for a minute or so and remove them into a bowl. Once you are done with all the pieces cover up and put it on the side

  • add 1/2 cube of butter in the skillet and melt it

  • add in the already diced onions and sauté them for a few minutes until slightly brown

  • add in your garlic and mushrooms and sauté this for a few minutes

  • add in 1/2 a cup of red wine and cook it for a few minutes

  • add in 2 teaspoon of dijon mustard

  • add 2 tablespoon of worcestershire sauce

  • add 1 teaspoon of bouillon, stir it well and sauté for a few minutes

  • add 1 cup of half and half

  • add 2 tablespoon of sour cream and stir it well

  • mix 1 tablespoon of cornstarch with 2 tablespoon of water, stir it until it’s really smooth and add it to the skillet and stir it really well ( I prefer to use cornstarch, you don’t have to use as much as if you used flour and it’s gluten free)

  • add your beef back to the skillet and mix it well, and cook it for a few minutes then cover it up and let it sit

Polenta

  • 1 roll of pre made polenta (I could not find polenta so I had to buy an organic pre-made polenta)

  • put half cube of butter in a frying pan, once it’s warm add your polenta

  • Add 1/2 cup of water and cook it slowly until polenta is soft.

  • Mash it with a fork and add 1/2 cup of half and half, stir it until it’s creamy

Serve the Beef Stroganoff over the polenta and sprinkle it with parsley.
