Chicken with roasted cauliflower, farro & basil sauce & lemon gremolata

 

This dish has an Italian touch to it. The basil sauce is different from pesto, so look at the recipe. The lemon gremolata makes the chicken even more delicious. It’s healthy and so yummyyyyyyy

Ingredients:

Basil sauce

  • 3 shallots

  • 2 garlic cloves

  • 1 cup of peas

  • 1/2 of a cup fresh basil leaves

  • 1/2 of a teaspoon of bouillon

  • 1/2 of a stick of butter

  • 1/2 of a cup chardonnay

Roasted cauliflower

  • 1 big head of cauliflower

  • olive oil - 1/2 of a cup

  • oregano - 1/2 of a teaspoon

  • thyme - 1/2 of a teaspoon

  • 1/2 spoon of beef bouillon (or your choice)

Chicken

  • 3 medium to large size chicken breasts

  • 1/2 of a cup of olive oil

  • 1/2 teaspoon oregano

  • bouillon

  • 1/2 of a cup white wine

Farro

  • 1 cup of farro

  • bouillon

Lemon Gremolata

  • 1 bunch of parsley

  • 3 - 4 garlic cloves

  • 2 lemon zests

  • 1/2 of a cup olive oil

  • beef bouillon (better than boullion)
