Creamy Chicken with Rice Pasta

Ok...ok ...Let me be 100% honest with this one! How did I come up with this recipe?

One day I did not know what to make and I did not have the time to go to the market or plan it out. I looked  in my fridge and had to see what’s in there.

Yes, I happened to have all the ingredients and just started creating. Let me tell you this came out to be so delicious, that this happens to be one of my favorit dishes. It’s quick, easy and it will impress anybody you will serve it to. Well, it has bacon, so we all know bacon makes everything better, right? In my house, everybody wants seconds, so make sure you make plenty :)


Ingredients:

·  Bacon – about 3 slices

·  2 organic chicken breasts

·  1 head of broccoli

·  1 medium onion

·  2 cloves of garlic

·  Peas (frozen organic)

·  Sun Dried tomatoes - 1 tbsp.

·  Artichoke hearts – 4-5

·  Basil 

·  Bouillon

·  ½ of a cup white wine (not mandatory but adds taste)

·  ½ of a cup cream (prefer half & half)

·  Rice noodles (or your choice of pasta)

 

Instructions:

·  Warm up skillet on top of the stove

·  Cut up the bacon in small pieces and add it to the skillet

·  Once the bacon is crispy remove it and put it on a paper towel that is soaks up the grease

·  Add chicken breasts cut up in small pieces

·  Once they cooked remove them into a pot with the juice

·  Add the onion – chopped fine

·  Sautee onion and garlic, add 1 tbsp. sun dried tomatoes chopped in small pieces,  once the onion is golden add in 1 cup of peas

·  Add in 1 cup of water and cook this for a few minutes

·  Add in the broccoli, cut up in small pieces and cook this for about 5 minutes

·  Add in 1 tbsp. of bouillon (I prefer “better than bouillon” beef flavor)

·  Add ½ of a cup white wine

·  Add back your chicken and cook for 5 minutes

·  Add ½ of a cup cream and stir

·  Add in the artichoke hearts cut in small pieces

·  After cooking for a few more minutes, you can turn off the stove. Add in 4-5 leaves of basil cut up in small pieces and put a lid on top and keep it warm.

 

Brown Rice Pasta

·  boil water in a pot with 1 tbsp. of oil

·  Once this is boiling add in your rice noodles and cook them until it’s soft, about 10 minutes but please check and cook accordingly as they are all different

·  After the noodles are cooked, drain water and rinse in cold water. (This will help the pasta not getting sticky)

 

Serve the Chicken over the pasta with the crispy bacon and basil on top.
