Juicy Chicen Fajitas

Gluten Free - Low Calories

These chicken fajitas recipe will have you crave it day after day. It’s not just tasty, delicious and juicy but it’s every mom’s dream as you have dinner on the table in about 30 minutes. Super easy to make. You just need to marinade the chicken for the best results and I suggest at least 1-2 hours, so that is a little prep work but when you are ready to make it, it will be really quick :) …..Yayyyyy…..

Ingredients:

The Marinade:

1 teaspoon of the following items: oregano, paprika, garlic salt, chili powder, cayenne, cumin, coriander, black crushed pepper, sea salt - mix all these spices together in a bowl

Squeeze 3 limes and add the juice to the mix with 3 tablespoon of olive oil

Fajitas:

  • 3 chicken breasts (this will easily feed 4-5 people)

  • 1 green bell pepper

  • 1 yellow bell pepper

  • 1 red bell pepper

  • 1 large onion

  • 1 bag of corn tortillas

  • 1 bunch of cilantro

  • sour cream

  • 2 avocados

  • pico de gallo/ spicy or you can have your own choice of salsa or you can cut up fresh tomatoes, onions & Jalapeño

    Chile peppers


  • 3 limes

  • jalapeno or habanero sauce

Instructions:

  • cut up the chicken into thin slices, mix all the ingredients in your marinade and stir it until smooth then add in the chicken slices. Mix it well, cover it and leave it in the fridge for at least 1-2 hours

  • cut up the bell peppers into thin, long pieces

  • cut up the onion into thin, long pieces

  • heat a skillet on the top of the stove on high heat

  • add in the chicken, cook it and stir it until it’s slightly brown and fully cooked

  • remove all the chicken from the skillet into a bowl and all the juices, cover it up with tinfoil and let it steam

  • add in the onions and stir them until they are slightly brown

  • add in the bell peppers, stir them and cook them until they are slightly brown

  • now we will add back in the chicken stir it well and then you can also add back the juice

  • in a large frying pan warm and brown your corn (or flour per your preference) tortillas

  • serve it with sour cream, fresh cilantro, cut up avocados, pico de gallo/or salsa, lime & habanero sauce if you like it super spicy (or Jalapeño)
