Mahi Mahi in orange caper sauce over steamed cabbage
White fish is my favorite choice of fish. Mahi Mahi soaks up all the flavors and it’s easy and quick to prepare. This dinner can be served in half an hour and it’s very tasty.
Ingredients:
4 pieces of Mahi Mahi
butter
2-3 shallots
2 cloves of garlic
capers
1 big orange - squeezed orange juice (if it’s smaller use two)
bouillon
thyme
parsley
Instructions:
on top of the stove warm up your skillet
once it’s hot melt half of a cube butter in it
cut up your shallots as seen in picture and add it to the skillet
sauté until slightly browned add 2-3 cloves minced garlic and sauté a few minutes more
rinse 1/2 of a cup of capers in water and add them to the mix
add in your squeezed orange juice
add 1 teaspoon of bouillon (better than bouillon) and stir this mix
add in your fish and cook it for 3 minutes on each side until slightly browned. (if it's a thicker piece you may need slightly longer)
I served the fish over steamed cabbage with garlic bed sprinkled with fresh parsley. Sides: Rizi bizi (special rice, listed under sides) and sautéd baby cauliflower.
