Omelette delight

 

Who says eggs have to be boring? There are so many yummy ways you can prepare them. This omelette is full of wonderful flavors. If you love eggs and veggies you will absolutely love this! It’s easy, quick and delicious.

Ingredients:

  • 2 eggs

  • 1/2 of a shallot

  • garlic clove

  • 3 cherry tomatoes

  • 2 mushrooms

  • spinach

  • 1/2 of avocado

  • parsley

  • thyme

  • oregano

Instructions:

  • put 1 tablespoon of olive oil in a pan and sauté your diced onions for a few minutes

  • Add in your garlic, tomatoes, mushrooms and your spices, oregano & thyme and sauté for a few minutes

  • beat the eggs in a bowl and add a little salt and black pepper

  • Spread the mushrooms, and tomatoes in the frying pan equally and pour the eggs in the pan. Move it around that the eggs covers all parts of the pan.

  • Add in your greens, here I used spinach but you are welcome to use kale, power greens as well

  • Cook the eggs on medium heat. When it’s nice and golden with a stainless steel spatula fold the eggs in half. Once you see it’s cooked, color should be nice golden, then you can slide it over to a plate.

I served this with avocado balls and little sriracha and sprinkled it with parsley.
