Pasta with Prosciutto, Broccolini & Artichoke Hearts

We all love pasta, right? There are so many amazing ways to prepare them. Let’s get creative! This is a light dish, absolutely delicious. I served over Glass noodles made from sweet potatoes. You are of course welcome to serve it with your favorite pasta :)




Ingredients:

  • 2 cloves of garlic

  • 3- 4 slices of prosciutto

  • sun dried tomatoes - 2 teaspoon

  • 1 box mushrooms

  • 1/2 cup of artichoke hearts

  • 1 box of broccolini

  • 1 teaspoon of capres

  • 1 teaspoon of bouillon

  • thyme

  • basil

  • 1/2 cup of white wine

  • hot crushed peppers

  • sweet potato glass noodles (or your favorite pasta)

Instructions:

  • sautee garlic on 2 tablespoon of oil

  • add in 1 cup of mushrooms already cut up into thin slices

  • add in 1/2 of a cup white wine

  • Add 1/2 teaspoon thyme and crushed red pepper

  • Add in 1 teaspoon of bouillon (I prefer better than bouillon brand and beef flavor but you can use any flavor)

  • Add 1 tablespoon of sun dried tomatoes cut up into small pieces and sautee for a few minutes

  • cut up the prosciutto in small pieces (3-4 slices) and add it to the mix

  • cut up your artichoke hearts into small pieces and add it to the mix, I also add some of the marinade from the bottle (adds extra flavor)

  • add in the capers and add 1/2 of cup of water and sautee for few minutes

  • cut up the broccolini and add it to the mix, cook until half cooked (or if you like them soft cook as desired) and add in the basil

  • cover it up and let it sit for few minutes

  • serve it over your favorite pasta and you can add fresh basil & parmesan & extra crushed red pepper
