Pork Shank With Garlic Mashed Potatoes

We started our Sunday morning going to the farmers market and get all of our fresh vegetables from there. This is the perfect meal for those Sundays when it’s chilly outside like it was today and you just want to cuddle on the couch and watch movies. What makes these Sundays even more special is that something really delicious is cooking in the kitchen!  The smell of the different flavors blending together makes the entire house feel really cozy.  It’s truly  heartwarming and good for the soul! Well I promise this dish will not disappoint. 

Ingredients:

Pork Shank

  • 4-5 porkshanks

  • 2 heads of onion

  • 3 - 4 garlic cloves

  • 1 large tomato

  • Oregano ½ teaspoon

  • Thyme ½ teaspoon

  • Black pepper ½ teaspoon

  • 2 fresh carrots

  • 2 fresh parsnips

  • 2 fresh stalk of celery

  • 1 bottle of bear

  • Bouillon 1 tablespoon or salt (your preference)

Garlic Mashed potatoes

  • 3-4 large potatoes

  • ½ cup of milk

  • ½ of butter cube

  • 3-4 garlic cloves

  • Salt and pepper

Sauteed Green beans and zucchini

  • 2 handful of green beans

  • 2 zucchinis

  • Garlic

  • Sriracha 1 teaspoon

Instructions: 

Pork Shank

  • Warm up 1 tablespoons of oil in a deep frying pan on medium heat

  • Add the onions cut up in small fine pieces and saute this until lightly browned

  • Add garlic

  • Add the fresh thyme

  • Add oregano

  • Add in the tomato sliced in circles

  • Add 1 tablespoon of bouillon(or salt)  and pepper to taste

  • Add in the carrots, celery and the parsnips and cook for about 5 minutes 

  • Add in the porkshanks to the mix and add ½ of a bottle beer to cover just to the edge of the shanks

  • Cover it up and cook it for about 45 minutes - 1 hour on low-medium heat

  • Once the liquid is reduced add in the other ½ of the beer and you can also turn the shanks around. Cook it for another 45 minutes until the meat is soft. 

Remove the shanks and blend all the vegetables. Once blended you can add it back in the pan and add the shanks back.

Serve the shanks over the sauce with mashed potatoes and sauteed veggies.

Garlic Mashed potatoes

  • Cut up the potatoes in chunks

  • Poor water over the potatoes to cover them fully

  • Add salt to the water and boil it until the potatoes are soft

  • Drain the water

  • Add in 3 minced garlic cloves, 

  • Add ½ of cube of butter

  • Add ½ of a cup of milk

  • Mash the potatoes until the mix is very soft and creamy

Sauteed green beans & zucchini

  • Heat up 1 tablespoons of oil in a frying pan

  • Add in 2 cubes of minced garlic

  • Once the oil is hot add in your green beans and add the 1 teaspoon of sriracha

  • Sautee this until the beans are ½ way cooked and still a bit crunchy

  • Add in the cut up zucchini and sautee this for a few more minutes (2 - 3 minutes) 

Zucchini cooks pretty fast so make sure  that you don’t overcook it.
