Sautéed Spinach in Creamy Dill Sauce

I love coming up with new recipes. In my opinion delicious sauces enhance any main dish. This Spinach dill sauce just does that, enhances all the flavors. Spinach soaks up all the seasonings and definitely opens up your paletes. It is also definitely a plus when you can prepare it super fast :)

Ingredients:

  • 2-3 shallots or 1 yellow onion

  • 1 tbsp of oil (suggest grape seed oil)

  • 2 garlic cloves

  • 1/2 of a bunch of dill

  • 2 x a bunch of spinach

  • Pepper

  • Hot crushed chili pepper

  • Bouillon - 1 teaspoon (optional but sure makes it taste better. My favorit is “Better than Bouillon” if you prefer just salt use to your taste (1/2 of a teaspoon or less)

  • Marsala wine -1/2 cup

  • Half and half - 1/2 cup

  • 1 lemon

Instructions:

1. Cut up onions and sauté them with 2 tablespoons of oil

2. Add 2 garlic cloves, cut up fine or minced

3. Add finely chopped 1/2 a bunch dill and sautée this mix for a few minutes

4. Add in 1 teaspoon of bouillon

5 . Add 1/2 of a teaspoon black ground pepper

6. Add in 1/2 of a cup of half and half

7. Wash the spinach really good and add it to the mix, sautée for few more minutes

8. Add in 1/2 of a cup of the marsala wine and cover it up and sautée for few more minutes. Then you can turn it off and let it sit for a few minutes before serving.

I served this sauce over Mahi-Mahi White fish. I also added a mashed potato bed below and roasted brussels sprouts on the side and a few lemon circles on top.
