Skillet pork with mushroom gravy & rizi bizi rice

This is an easy but delicious and quick dish to make!

I promise you, once you serve it nobody will ever know that it took hardly any effort to make it :).....and you will get all the credit! How amazing is that?

If you do prefer chicken,  it will come out just as delicious, I promise! So go for it, what’s holding you back?

I love to serve it with “Rizi Bizi” which reminds me of my childhood.

It’s a rice dish but it’s so Yummmmyyyy. I love jasmine rice, it’s just the perfect rice to cook and with the addition of peas, will just give that extra “Wowwww”

Enjoy!

Ingredients:

·  Pork loin / 1 lbs.

·  2 shallots

·  2 cloves of garlic (minced)

·  1 box of baby portobello mushrooms (or mushroom of your choice)

·  ½ of a stick butter

·  ½ of a cup white wine (your option)

·  1 tbsp.. of bouillon

·  Parsley

·  Salt

·  Pepper

·  Jasmine rice (my favorite)

·  Frozen organic peas

 

Instructions:

·  On top of the stove warm up skillet or frying pan (large size)

·  Melt ½ of a stick of butter

·  After you cut up the pork loin into about ½ an inch slices, add them in the skillet and brown them on each side for about 2-3 minutes. Add salt and black crushed pepper. (a pinch of each)

·  Remove the pork, put it on a plate

·  After cutting up the shallots and garlic (minced) add them to the skillet and sauté them for a few minutes

·  After cutting up the mushrooms add them to the skillet and sauté them until slightly brown

·  Add in ½ of a cup of white wine

·  Add in 1 tbsp. of bouillon (I prefer beef, but you can use your choice of bullion of just salt)

·  Add back all the pork pieces and cook this down a bit. Add in ½ of a cup water and cook it for about 5 more minutes.

·  Mix in a little glass bowl 1 teaspoon of cornstarch and water, make sure it is very smooth and add it to the skillet. This will make the gravy thicken a bit.

·  Put a lid on and let it sit.

 

RIZI BIZI (Hungarian rice)

·  Warm up in a pot 1 tbsp. of oil

·  Add in 1 cup of jasmine rice and brown it for a few minutes

·  Add in 1 clove of minced garlic and a few pieces of parsley cut up fine

·  Add in 1 cup of frozen green peas

·  Add in 1 ½ of a cup of water and bring it to a boil

·  Add in 1 tbsp. of bullion

·  When it’s boiling bring it to low to medium heat and cook until rice is soft

(About 10 minutes – make sure you taste it)
