Wiener Schnitzel ala Yummy Twist

Wienerschnitzel….yummyyyyy

First when I arrived in the USA in 1989 I could not believe they referred to hot dogs as “wienerschnitzel” ….whatttt? 

This is again one of my favorit dishes. I crave it if I don't have it for a while.

Most of the time you would use pork or veal but you can definitely make it from chicken breasts as well. I love all versions. I don’t use veal for obvious reasons….but I will not judge if you do :)....I promise it will be just as delicious as pork or chicken.

Follow the recipe and I am sure you will aslo be a big fan!  The great thing is that you can serve it with chimichurri which will enhance the flavor and you will have your taste buds on high alert :)))

I will shortly post “Chicken Picatta” which is very similar with a tingy lemon caper sauce which is absolutely delicious as well.

Ingredients:

1. Pork loin – about 1 lbs (should feed about 4 people)

2. 1 cup flour or regular flour (your own preference)

3. 2 eggs

4. Lemon

5. Balsamic Vinegar

6. ½ cup of white wine

7. Hot chili pepper

8. Italian breadcrumbs GF or regular

9. Garlic

10.  Bouillon

11.  Salt

12.  Pepper

13.  Grapeseed or the oil of your preference (which can be used for high heat)

14.  Broccolini about 10 pieces (or 1 pack from Trader Joe’s)

15.  Quinoa

16.  Parsley

17.  Chimichurri (not a must but it really adds taste to the dish)

 

Instructions:

Prepare Quinoa first:

1. Prepare quinoa, heat grapeseed oil about 3 spoonsful.

2. When it’s warm add in 1 cup of Quinoa.

3. Add in 2 fresh minced garlic and stir it.

4. Add 1 tablespoon of bullion or just 1 teaspoon of salt (or less).

5. Add 1 teaspoon of pepper.

6. Stir this and when it is a little browned add 2 cups of water. 

7. On high heat, boil it until the quinoa starts to expand. Then lower the heat and once it’s soft and fluffy turn it off and let it steam.

8. Add in ½ cup finely cut up parsley

Broccolini

1. Wash and put all broccolini spaced out in a pan

2. Put 2 tablespoons of grapeseed oil on top (or healthy oil of your choice)

3. Add 2 minced garlic

4. 1 teaspoonful of hot crushed chili pepper (if you like it spicy)

5. Drizzle Balsamic vinegar over the broccolini (Around 2 tablespoons)

6. Add 1 teaspoonful of Better than bouillon or a pinch of salt

7. Start sauté this until broccolini is halfway soft

8. Then turn off the heat and let is steam under a cover

  

Breaded Pork Loin – Wiener schnitzel

1. Cut up pork into about ½ inch thick pieces (2-3 pieces per person)

2. Tenderize pork on both side

3. Prepare 3 plates. One with flour (rice or regular), 2nd bowl with 2 eggs and 3rd bowl with breadcrumbs (Italian and it can be GF)

4. Whip eggs and add a little salt

5. Dip pork into the flour, then to the egg, and finally the breadcrumbs

6. Heat oil in the meantime. Put enough oil in a pan that it would cover the pork pieces.

7. Bring it to high heat. Once it reaches the temperature, we need you can lower it. You can drop a tiny breadcrumb in there to test, if it sizzles it's ready.

8. Put the pork pieces in there and fry them until golden on both sides

Serve:

You can use and ice-cream scooper for the quinoa – 1 or two scoops per your preference

Add about 2 -3 pieces of broccolini

1 – 2 pieces of breaded pork loin

Add 1 – 2 spoonsful of chimichurri

Add 2 slices of lemon for decorations and some parsley
