Asian Chicken Salad

This is an amazing dish for a light, summer night dinner!

It’s one of the quickest meals you can prepare!

The ingredients with the amazing flavours will give you the ultimate Asian Fusion Chicken salad experience!

The homemade dressing is a MUST! It’s easy, healthy, you know what’s in it and it will make this salad the most amazing salad you ever had!

You can make this in ½ an hour and serve it to your favourit peeps :)

INGREDIENTS:

·   2 Antibiotic Free Boneless Skinless Chicken breasts

·   1 cup teriyaki sauce, homemade or store-bought

·   Chili oil

·   1 1/2 tablespoons grapeseed oil

·   Kosher salt and freshly ground black pepper, to taste

·   2 cups of shredded carrots

·   Sugar snap peas 1 cup

·   3/4 cup crispy wontons

·   1 (11-ounce) fresh mango

·   1/2 cup roasted almonds

·   1/2 cup chopped fresh cilantro leaves

FOR THE PEANUT DRESSING

·   2 tablespoons peanut butter

·   2 tablespoons balsamic vinegar

·   1 tablespoon of ponzu

·   1 1/2 tablespoons rice wine vinegar

·   2 tablespoon of olive oil

·   1 tablespoon honey

·   1 fresh lemon - juiced

·   1 clove garlic, minced

DIRECTIONS:

1. In a small bowl, whisk together peanut butter, balsamic vinegar, rice wine vinegar, honey, lemon, ponzu, garlic and 1/4 cup warm water until smooth. Add it in a blender and blend until it’s creamy. Put it in the fridge to cool.

2. Cut up chicken breast into slices and tenderize them. After this step, cut them up into smaller pieces. Put the chicken in a bowl and put chili oil on top with a bit of teriyaki sauce and mix it well.  from the marinade.

3. Preheat the oven to 350 and once the oven reaches temperature with a skillet inside the oven, put all the chickens in the skillet and cook until fully cooked, approximately 15 minutes

4. In the meantime, cut up the peapods into long skinny pieces and add them to a salad bowl with the carrots, and cabbage. Cut up the mango into small cubes and add them to the salad.  

5. Add cut up cilantro and mix everything together well and carefully.

6. Top the salad with almonds and crispy wontons and the chicken.

7. Serve with the dressing on the side or mixed in the salad whichever is your preference.
