Chicken Vegetable Teriyaki quinoa, farro bowl

 

I think we all love quick, easy but delicious recipes. Well, this is one of those and I promise everybody around your table will absolutely love it, even your kids!

This is not just delicious but healthy with amazing ingredients. Dinner on the table in 1/2 an hour, a mother’s dream :)….It’s a must try for sure ….yummmmm

Ingredients:

  • 1 medium size onion

  • 2-3 garlic cloves

  • 1 red bell pepper

  • 1 small bag snap peas

  • 1 cup of broccoli (1/2 a pound)

  • 1 cup of oyster mushrooms (1/2 a pound)

  • 2 large carrots

  • 1/2 a pound green beans (1 cup)

  • 1 bunch of chinese broccoli

  • 2 medium size chicken breasts

  • teriyaki sauce ( I used orange flavor here)

  • 1/2 of a cup quinoa

  • 1/2 of a cup farro

Instructions:

  • First add 1/2 of a cup of quinoa and farro to a pot and on 2 tablespoon of oil and stir it, brown it for a few minutes

  • Then add 1 1/2 of a cup water, add 1 tablespoon of bouillon and cover it up and cook it until it’s soft on medium heat

  • turn it off when it’s soft and all the water evaporated

  • in a bowl add in the teriyaki sauce and marinate your chicken at least for 1/2 an hour

  • Heat up the grill or oven and grill the chicken or broil it until it’s soft and fully cooked

  • cut your onion in half and slice it very thin

  • cut up your red pepper in half and cut it into long strips

  • cut up the garlic cloves into small pieces

  • cut up your green beans medium size, same with broccoli, the carrots in round circle (thin) and the Chinese broccoli into smaller pieces

  • heat 2 tablespoon of oil in a skillet on the stove

  • When it’s hot add in your onions and garlic

  • add in slowly all your vegetables, start with carrots, snow peas, green beans, sauté for a few minutes, then continue with the broccoli, Chinese broccoli and the oyster mushrooms

  • add the teriyaki sauce and sauté until your vegetables are to your liking. I usually like my veggies half hard, crispy.

  • Once the vegetables all cooked add in your quinoa farro mix

  • Cut up the the chicken from the grill and add it to the mix

Serve it while it’s hot. If you like spicy food, garlic chili sauce goes really well with this dish. Timing is everything in the kitchen so you don’t want to prepare the vegetables first or they will steam too long and will be overcooked. Prepare quinoa and farro first. Then the the chicken and finally the vegetables. Bon Appetite! You will love this dish :)
