Chicken Francene

 

Who doesn’t love Italian food, right? There are so many amazing recipes. I absolutely love this dish, all the flavors just blend together and give the best taste. The lemon enhances all that and gives it a super special and intense enjoyable zest. Enjoy!

Ingredients:

  • 2 large chicken breasts - cut up in several pieces

  • flour

  • 2 eggs

  • 2 lemons

  • salt

  • pepper

  • 1/2 of a cube butter

  • bouillon

  • oil

  • basil

  • parsley

  • white wine (I used chardonnay)

  • pasta of your choice

Instructions:

  • put four in a bowl add salt and pepper and mix it up

  • in another bowl crack two eggs and whip it really well

  • cut up your chicken and tenderize it

  • on top of the stove in a skillet heat up a little bit of olive oil (some olive oil should not be heated)

  • dip each piece of chicken in the flour first then in the eggs and when the oil is hot put each piece in the oil and fry it for a few minutes on each side until golden brown

  • grind the out layer of the lemon on top of the chicken, the lemon zest will give extra burst of flavor

  • remove each piece and put it on a paper towel

  • while the chicken is frying cut up the lemons into thin pieces and ad them in the oil

  • add 1/2 of a cup of white wine to this

  • add 1/2 of a cup of water and 1 teaspoonful of bouillon

  • cook this down for a few minutes

  • add in 1/2 of a cube butter and cook it down for a few minutes

  • cook your choice of pasta in the meantime and serve the chicken with the sauce over it, add fresh basil and parsley

Here I also made a special combo sauce with artichoke hearts, with mushrooms, sundried tomatoes, garlic in olive oil, sauteed all together and put this over the pasta.
