Gulyas Soup

As I mentioned before, I grew up in Hungary. We had this soup quite often, lucky me! This soup is definitely a full meal and one of the dishes everybody knows in the world. Let me tell you, it will live up to its reputation. One of the ingredients you probably don’t use much is Caraway powder. This adds that special distinct flavor to the soup. If you can’t find it in your local store, you are able to purchase it on Amazon.

It’s absolutely delicious and you can't help yourself but to have seconds. :)

You can serve it with some fresh, warm baguette or bread of your choice.

INGREDIENTS:

1. 1 big size onion

2. Grapeseed oil or light oil to cook with

3. Hungarian paprika

4. Caraway powder - 2 tspn

5. 1 bell pepper  

6. 1 tomato

7. 1 glass of red wine

8. 5 pieces of carrots

9. 2 pieces of parsnips

10. Beef – flap meat – 2 big slices (I prefer this meet for the soup as it is very soft and no matter how long you cook it, it will stay soft)

11.  7 – 8 pieces of red baby/new potatoes

12.  Rice flour if you are GF or you can use regular flour

13.  1 egg

14.  1 bunch of cilantros

15.  At the end add spices you can add chili sauce / or slices of jalapeno/ or 1 slice of habanero

 

Instructions:

1. Cut up the onion fine then sauté them on oil until soft and a bit brown

2. Pull the pot off the fire and add 2 tablespoons of Hungarian paprika and mix it together.

3. Prior cut up the beef into small pieces Add in the beef and mix it and then put it back on the stove (on heat) not too hot (in about mid-way on electric stove or on gas use low. Stir this for a few minutes then  add in the wine and mix it well. You can also use ½ of a cup of beer instead of the red wine.

4. Add 1 tomato cut in half and 1 green bell pepper cut in half

5. Add in the cut-up carrots and parsnips Cut these up in circles prior.

6. Add in 1 tablespoon of bouillon (better than bouillon- beef flavor) If you prefer just salt use Himalayan salt to your taste. Add the caraway powder - 2 tspn

7. Add water about up to 4 gallons (this will feed a family of 4 nicely)

8. Lower heat and cook this until carrots are halfway soft

9. Add in the potatoes. Cut them up prior into small pieces.  Cook this now until the potatoes are soft.

10.  In the meantime, in a glass bowl add in a cup of rice for GF (or regular flour) and add 1 egg and a little salt. Mix this well to create a small dough.

11.  Once the soup is boiling you can grade the above mixture into the soup. These are your home-made noodles.

12.  Once everything is soft turn off the heat and at the very end add in your finely cut cilantro. Take it off the heat and just have it sit here with the lid on for about 10-15 minutes.

You can serve it with a fresh baguette or bread of your choice.
