Vegetable Medley with Pork Bones

Soups warm the heart and soul! There are so many options when it comes to soups.

This soup is definetely for vegetable lovers. It’s light and super healthy.

I love making soups and smell it in my living room on a cozy day when it’s getting chilly outside and the whole family is around having great conversations and fun. Something is so special about it.

You can serve it with a delicious fresh baguette. Make sure you warm the baguette in the oven for a few minutes to make it even more desirable. I have never had anybody at my house who did ask for seconds :) Enjoy!

Ingredients:

  • Pork bone with meat on it

  • 1 big onion

  • 1 big tomato

  • 2 garlic cloves

  • 2 carrots

  • 2 parsnips

  • 2 celery stalks

  • 2 zucchinis

  • 1 handful of green beans

  • ¼ cabbage head

  • 2 corns

  • Kale

  • 1 turnip

  • 1 red bell pepper

  • Barley ½ of a cup

  • Bouillon (prefer beef but it’s your choice or you can substitute with salt)

  • Black pepper

  • 1 habanero (if you would like it spicy)

  • 1 bottle of light beer

Instructions:

  • On medium - high heat in a frying pan put 2 tablespoons of oil (prefer grapeseed oil for high heat). Once it’s hot, place each pork bone with meat in the pot and brown it for a few minutes on each side. After about 3 minutes on each side you can turn it off and put this on the side.

  • Dice the onion fine and in a soup pot saute it for about 4-5 minutes on medium-high heat  until lightly browned with 2 tablespoons of oil

  • Add in ½ a teaspoon of oregano, thyme, black pepper, diced garlic & a cut up tomato and saute for another 2-3 minutes

  • Add in 2 tablespoon of bouillon or 1 teaspoon of salt if you prefer 

  • Add in the bones to this mix and add ½ of a bottle beer (it will make your soup taste delicious and make the meat really soft). Cover it up and cook this for about 5 minutes and lower to medium heat. Don’t worry about the alcohol as it will cook off.  If you prefer you can leave the beer out but it really gives a special flavor.

  • Add in the cut up carrots, parsnips, celery, green beans and cover it with a lid and cook for about 10 more minutes

  • Cut up the corn into circle pieces and add them to the mix - cook this for another 20 minutes

  • You can also add in the cabbage cut up in thin pieces now and the turnip cut up in cubes. Add in the rest of the beer and cook this for about 20 minutes (cooking time is based on the pork,  you want to make sure it’s soft)

  • In the meantime in a separate pot boil water and cook the barley until it’s soft.

  • Cut up the zucchinis and the kale into small pieces

  • Test the meat and only put in the zucchini and kale once the meat is really soft. Cook it for a few more minutes

  • As the last step add in the barley and you can serve the soup with fresh parsley and lemon
