Broccoli Puree Soup
Soups are my absolute favorite. They are very tasty and give you this cozy feeling when you are making them and having them. I grew up on soup, we had them every day as the 1st course of our meal. My body craves it if I don’t have any for a few days. This is one of the reasons I always have some in my fridge. They are the perfect lunch.
This Broccoli puree soup has no cream, it’s all veggies. It’s light, very healthy and extremely tasty.
Bonus that it’s very easy to make, and it also cooks fast.

Ingredients:
Quarter of butter or 3 tablespoons of grapeseed oil (Or oil of your choice) (for vegan option)
1 leak
1 red pepper
2 carrots
1 parsnip
2 celery stalks
4- 5 cups of broccoli
Bouillon
1 teaspoon of oregano
1 teaspoon of thyme
Black pepper
2 garlic cloves
Chili sauce (optional)
1 lemon
1 cilentro
Instructions:
Cut up leaks into circles, cut up carrots, parsnip, celery and broccoli in small pieces
Melt butter or use oil and add in leaks
Saute until little brown and add garlic, oregano, and thyme and sautee few more minutes
Add in ½ teaspoon of black pepper
You can also add in 1 teaspoon of chili sauce (optional)
Add carrots, parsnip, and celery and saute for 2 more minutes
Add in 5 cups of water
Add in 1 tablespoons of bouillon or if you prefer salt, add instead 1 teaspoon of salt (prefer himalayan pink salt)
Add in Broccoli and now cover it up and cook this mix until all vegetables are soft
Once it is cooked, add mix in a blender and start blending the soup up.
Have a soup pot ready so that you can pour the blended mixture in it.
Add the very end edd in first ½ of a lemon juice (taste it, if you prefer more add in the other half)
Cut up the cilantro into very fine pieces and also add this in at the end. You can also put it in the blender.
