Chicken Black bean Soup
This is a new creation I started making. We love all soups in my household so I always try to create some new, exciting recipes. This soup is such a great combination and it will fill you up. The flavours from all the spices, the beans, the chicken and all the vegetables will give you the ultimate fulfilling feeling. You just can’t have enough!
Ingredients:
· 2 chicken breasts (organic)
· 2 zucchinis
· 2 cans of organic black beans
· 1 stalk of leek
· 1 red bell pepper
· 2 stalks of celery
· 2 cloves of garlic
· 3 carrots
· 1 parsnip
· 1 teaspoon of Thyme
· 1 teaspoon of Oregano
· 1 teaspoon of Black pepper
· 1 tablespoon of Bouillon (beef, vegetable or chicken per your preference)
· ½ of a cup red wine
Instructions:
· Put 2 tablespoons full of grapeseed oil in a soup pot and heat it up
· Cup up all your vegetables and chicken prior to start cooking
· Add in your leaks to the pot and sauté them for about 5 minutes with minced
garlic
· Add in your spices, thyme, oregano, black pepper and sauté for a few more minutes
· Add in your carrots, parsnip, celery to the mix and sauté for 5 more minutes
· Add in your chicken and sauté a few more minutes
· Add in the ½ of a cup wine
· Add 1 tablespoon of bouillon
· Add in 2 cups of water and cover it up and bring it to a boil
· Cook it for about 10-15 minutes then add in 4 more cups of water and bring it to a boil again. Taste it and as needed add salt and possibly and other ½ of a cup wine and cook it for another 15 minutes on lower heat
· As a final step add in the zucchini and cook it for another 5 minutes and then you can turn it off. Put a lid on top and have it sit for a few minutes prior to serving.
· You can top it with jalapenos, lemon & parsley. I usually add a little chili sauce
